    • 1 (15.25 oz / 432 g) box of chocolate cake mix
    • 1/2 cup (115 g) unsalted butter, melted
    • 1 large egg
  • For the gooey layer:
    • 8 oz (227 g) cream cheese, softened
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1/2 cup (120 g) unsalted butter, melted
    • 4 cups (500 g) powdered sugar
    • 1/4 cup (25 g) cocoa powder
  • Optional toppings:
    • Whipped cream
    • Chocolate chips
    • Powdered sugar

Instructions

  • Preheat the oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch (23×33 cm) baking dish with butter or non-stick spray.
  • Prepare the cake base:
    • In a medium bowl, mix together the chocolate cake mix, melted butter, and egg until a thick dough forms. Press this mixture evenly into the bottom of the prepared baking dish.
  • Make the gooey layer:
    • In a large bowl, beat the cream cheese until smooth. Add the eggs, vanilla extract, and melted butter. Mix until well combined.
    • Gradually add the powdered sugar and cocoa powder, beating until the mixture is smooth and creamy.
  • Assemble the cake:
    • Pour the gooey layer over the cake base and spread it evenly.
  • Bake the cake:
    • Bake for 40-45 minutes. The edges should be set, but the center will remain slightly gooey—this is what gives the cake its signature texture.
  • Cool and serve:
    • Allow the cake to cool for at least 20 minutes before slicing. Serve warm or at room temperature with optional toppings like whipped cream or a sprinkle of powdered sugar.

Notes

  • For a richer flavor, add 1/2 cup of chocolate chips to the gooey layer.
  • Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
  • To reheat, warm slices in the microwave for 10-15 seconds for that ooey, gooey texture.
