Ingredients
Scale
Serves 12:
For the cake base:
1 (15.25 oz / 432 g) box of chocolate cake mix
1/2 cup (115 g) unsalted butter, melted
1 large egg
For the gooey layer:
8 oz (227 g) cream cheese, softened
2 large eggs
1 teaspoon vanilla extract
1/2 cup (120 g) unsalted butter, melted
4 cups (500 g) powdered sugar
1/4 cup (25 g) cocoa powder
Optional toppings:
Whipped cream
Chocolate chips
Powdered sugar
Instructions
Preheat the oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch (23×33 cm) baking dish with butter or non-stick spray.
Prepare the cake base:
In a medium bowl, mix together the chocolate cake mix, melted butter, and egg until a thick dough forms. Press this mixture evenly into the bottom of the prepared baking dish.
Make the gooey layer:
In a large bowl, beat the cream cheese until smooth. Add the eggs, vanilla extract, and melted butter. Mix until well combined.
Gradually add the powdered sugar and cocoa powder, beating until the mixture is smooth and creamy.
Assemble the cake:
Pour the gooey layer over the cake base and spread it evenly.
Bake the cake:
Bake for 40-45 minutes. The edges should be set, but the center will remain slightly gooey—this is what gives the cake its signature texture.
Cool and serve:
Allow the cake to cool for at least 20 minutes before slicing. Serve warm or at room temperature with optional toppings like whipped cream or a sprinkle of powdered sugar.
Notes
For a richer flavor, add 1/2 cup of chocolate chips to the gooey layer.
Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
To reheat, warm slices in the microwave for 10-15 seconds for that ooey, gooey texture.
