  • 1/2 cup (100 g) granulated sugar (or a sugar substitute like coconut sugar)
  • 1 large egg

Instructions

1. Preheat the oven

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. Mix the dough

  1. In a medium bowl, combine the almond butter, sugar, and egg. Mix with a spatula or spoon until a smooth, sticky dough forms.

3. Shape the cookies

  1. Scoop out tablespoon-sized portions of the dough and roll them into balls.
  2. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  3. Flatten each ball slightly with a fork, creating a crisscross pattern on top.

4. Bake

  • Bake in the preheated oven for 8–10 minutes, or until the edges are set and the tops have a slight crackle.

5. Cool and serve

  1. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  2. Enjoy as is, or sprinkle with a pinch of sea salt for a sweet-and-salty twist.
