These 6-Minute Caramels are soft, buttery, and perfectly sweet! Made in the microwave, this quick and easy recipe is perfect for holiday treats, gifting, or indulging anytime you crave homemade caramel.

Makes about 24 small caramels

  • 1/4 cup (60 g) unsalted butter, melted
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (120 g) light brown sugar, packed
  • 1/2 cup (120 ml) light corn syrup
  • 1/2 cup (120 ml) sweetened condensed milk
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  • Prepare your dish:
    • Line a small square baking dish (8×8-inch or smaller) with parchment paper, leaving an overhang for easy removal. Lightly grease the parchment paper with butter or cooking spray.
  • Mix the ingredients:
    • In a large microwave-safe bowl, combine the melted butter, granulated sugar, brown sugar, corn syrup, sweetened condensed milk, and salt. Mix well.
  • Microwave the caramel:
    • Microwave on high for 3 minutes. Remove the bowl and stir well to ensure even cooking.
    • Return the bowl to the microwave and cook for another 2-3 minutes. (Start checking at the 2-minute mark to avoid overcooking.) The caramel should reach a temperature of about 240°F (115°C) if using a candy thermometer, or a soft ball stage.
  • Add vanilla:
    • Carefully remove the bowl from the microwave (it will be very hot) and stir in the vanilla extract.
  • Pour and set:
    • Pour the caramel mixture into the prepared dish, spreading it evenly. Let it cool at room temperature for 1-2 hours, or until set.
  • Cut and serve:
    • Once firm, lift the caramel block out using the parchment overhang. Cut into small squares using a sharp knife. Wrap individual caramels in wax paper if desired.

Notes

  • Cooking times may vary depending on your microwave’s power. Adjust accordingly.
  • For salted caramels, sprinkle flaky sea salt on top of the caramel before it sets.
  • Store caramels in an airtight container at room temperature for up to 2 weeks, or freeze for longer storage.
