3 medium russet potatoes, cut into wedges
1 1/2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon dried oregano or Italian seasoning
Salt and black pepper to taste
Optional: 2 tablespoons grated Parmesan cheese
Optional: fresh parsley for garnish
Instructions
Preheat air fryer to 400°F (200°C) for 3–5 minutes.
Soak potato wedges in cold water for 20–30 minutes to remove excess starch, then drain and pat dry.
In a large bowl, toss potato wedges with olive oil, garlic powder, paprika, oregano, salt, and pepper until well coated.
Place wedges in the air fryer basket in a single layer (cook in batches if needed).
Air fry for 15–18 minutes, shaking the basket halfway through, until golden brown and crispy.
Sprinkle with Parmesan cheese and fresh parsley if using. Serve hot with ketchup or your favorite dipping sauce.
