Air Fryer Cheesy Mashed Potato Balls are crispy on the outside and gooey on the inside, made with leftover mashed potatoes, stuffed with cheese, and cooked to golden perfection in the air fryer.

Ingredients

  • 2 cups cold mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • Cooking spray

Instructions

  1. In a large bowl, mix mashed potatoes, cheddar cheese, green onions, garlic powder, salt, and pepper until combined.
  2. Scoop out portions and roll into balls (about 1.5 inches in diameter).
  3. Roll each ball in flour, then dip in beaten eggs, and coat with breadcrumbs.
  4. Preheat air fryer to 375°F (190°C) for 3-5 minutes.
  5. Spray air fryer basket with cooking spray and place potato balls in a single layer, not touching.
  6. Spray the tops of the balls lightly with cooking spray.
  7. Air fry for 10-12 minutes, shaking halfway through, until golden and crispy.
  8. Serve hot with dipping sauce of your choice.

Notes

  • Use leftover mashed potatoes that are firm and cold for easier handling.
  • Try different cheeses like mozzarella or pepper jack for variety.
  • Can be made ahead and frozen before air frying.
