Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup buttermilk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil or cooking spray

Instructions

  1. In a bowl, mix buttermilk, salt, pepper, garlic powder, and paprika.
  2. Add chicken pieces to the marinade and let sit for at least 30 minutes in the refrigerator.
  3. In another bowl, mix panko breadcrumbs and Parmesan cheese.
  4. Preheat air fryer to 400°F (200°C) for 5 minutes.
  5. Remove chicken from marinade and coat evenly in the breadcrumb mixture.
  6. Place chicken nuggets in a single layer in the air fryer basket and spray lightly with cooking spray or brush with olive oil.
  7. Cook for 10-12 minutes, shaking the basket halfway through, until golden brown and cooked through.
  8. Serve hot with your favorite dipping sauce.

Notes

  • Soaking in buttermilk helps tenderize the chicken and adds flavor.
  • Use gluten-free breadcrumbs for a gluten-free version.
  • Freeze uncooked coated nuggets for later use—just add 2-3 minutes to cook time from frozen.
