  • 1/4 cup (50 g) granulated sugar
  • 1/4 cup (50 g) brown sugar, packed
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup (65 g) all-purpose flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt

Instructions

1. Prepare the Dough:

  • In a mixing bowl, combine the peanut butter, granulated sugar, and brown sugar. Mix until smooth.
  • Add the egg and vanilla extract, and stir until fully incorporated.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.

2. Shape the Cookies:

  • Scoop about 1 tablespoon of dough and roll it into a ball. Flatten slightly with your hands. For the classic peanut butter cookie look, use a fork to create a crisscross pattern on top.

3. Preheat the Air Fryer:

  • Preheat your air fryer to 325°F (160°C) for 2-3 minutes.

4. Cook the Cookies:

  • Place a piece of parchment paper in the air fryer basket to prevent sticking. Arrange the cookies in a single layer, leaving space between them (cook in batches if necessary).
  • Air fry for 6-8 minutes, or until the edges are lightly golden.

5. Cool and Serve:

  • Let the cookies cool in the air fryer basket for 2 minutes before transferring to a wire rack to cool completely.

  • For a gluten-free version, use gluten-free all-purpose flour.
