These crispy, flavorful ranch-crusted chicken bites are the perfect snack, appetizer, or quick dinner option. Made in the air fryer, they’re healthier than traditional fried chicken but just as delicious. Perfect for dipping into your favorite sauces!

  • 1 lb chicken breasts or thighs (cut into bite-sized pieces)
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 packet ranch seasoning mix (1 oz)
  • 1/2 teaspoon smoked paprika (optional, for extra flavor)
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • Cooking spray


Instructions

  1. Prepare the chicken:
    • Cut the chicken into bite-sized pieces and pat them dry with paper towels.
  2. Set up the breading station:
    • In a shallow bowl, combine the panko breadcrumbs, Parmesan cheese, ranch seasoning mix, paprika (if using), and black pepper.
    • In a second shallow bowl, beat the eggs.
    • In a third shallow bowl, add the flour.
  3. Bread the chicken:
    • Dredge each chicken piece in the flour, shaking off the excess.
    • Dip it into the beaten eggs, ensuring it’s fully coated.
    • Roll it in the breadcrumb mixture, pressing gently to adhere.
  4. Preheat the air fryer:
    • Preheat your air fryer to 375°F (190°C) for 3–5 minutes.
  5. Cook the chicken bites:
    • Lightly spray the air fryer basket with cooking spray. Arrange the chicken bites in a single layer, making sure they don’t overlap.
    • Lightly spray the tops of the chicken bites with cooking spray.
    • Cook for 8–10 minutes, flipping halfway through, until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).
  6. Serve:
    • Serve the chicken bites hot with your favorite dipping sauces, such as ranch dressing, honey mustard, or barbecue sauce.


Notes

  • Make it spicy: Add 1/4 teaspoon cayenne pepper or red pepper flakes to the breadcrumb mixture for a little heat.
  • Gluten-free option: Use gluten-free panko and flour for a gluten-free version.
  • Batch cooking: If cooking in batches, keep the first batch warm in a 200°F oven while the second batch cooks.
