These Air Fryer Stuffed Sweet Potatoes are crispy on the outside, tender on the inside, and loaded with savory fillings. They’re super easy to make and perfect for a wholesome lunch, dinner, or even meal prep. Customize with your favorite toppings—this one’s a keeper!

Ingredients

  • 2 medium sweet potatoes

  • 1 tbsp olive oil

  • ½ tsp salt

  • ½ tsp black pepper

For the filling:

  • 1 cup canned black beans, drained and rinsed

  • ½ cup corn (fresh, frozen, or canned)

  • ½ cup diced tomatoes (or salsa)

  • ¼ cup shredded cheddar or Mexican blend cheese

  • 2 tbsp chopped red onion

  • ½ tsp cumin

  • ½ tsp smoked paprika

Toppings (optional):

  • Sour cream or Greek yogurt

  • Sliced avocado

  • Chopped cilantro

  • Lime wedges

  • Hot sauce


Instructions

  1. Preheat the air fryer:
    Set it to 390°F (200°C) for 3–5 minutes while prepping the potatoes.

  2. Prep the sweet potatoes:
    Wash and dry sweet potatoes. Poke several holes in each with a fork. Rub with olive oil and season with salt and pepper.

  3. Air fry the sweet potatoes:
    Place sweet potatoes in the air fryer basket. Cook at 390°F for 35–40 minutes, flipping halfway through, until tender and easily pierced with a fork.

  4. Make the filling:
    While the sweet potatoes cook, mix together black beans, corn, tomatoes, cheese, red onion, cumin, and smoked paprika in a bowl. Warm the mixture in the microwave or on the stovetop, if desired.

  5. Assemble:
    Once sweet potatoes are done, slice them open lengthwise. Fluff the inside with a fork and spoon the filling evenly into each potato.

  6. Top and serve:
    Add your favorite toppings and serve warm!

Notes

  • Want to make it vegan? Use dairy-free cheese or skip it altogether.

  • Add shredded chicken or taco-seasoned ground beef for extra protein.
