These crispy air fryer zucchini chips are a healthy and tasty snack or side dish. Lightly seasoned and perfectly crunchy, they’re a great alternative to potato chips. Quick to make and full of flavor, they’re a hit with both kids and adults!

Ingredients

  • 2 medium zucchinis, thinly sliced

  • 1 tablespoon olive oil

  • 1/3 cup grated Parmesan cheese

  • 1/3 cup panko breadcrumbs

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Optional: fresh parsley or dipping sauce for serving

Instructions

  1. Slice the zucchinis into thin, even rounds—about 1/8 inch thick. Use a mandoline for best results.

  2. Pat the zucchini slices dry with paper towels to remove excess moisture.

  3. In a large bowl, toss the zucchini slices with olive oil until coated.

  4. In a separate bowl, mix Parmesan, breadcrumbs, garlic powder, onion powder, salt, and pepper.

  5. Dredge each slice in the breadcrumb mixture, pressing gently so it sticks.

  6. Arrange the zucchini slices in a single layer in the air fryer basket. Do not overcrowd; cook in batches if needed.

  7. Air fry at 375°F (190°C) for 8–10 minutes, flipping halfway through, until golden and crispy.

  8. Remove from air fryer and serve immediately. Garnish with fresh parsley or dip into your favorite sauce.

Notes

  • For extra crispiness, slice the zucchini as thinly as possible.

  • To make it gluten-free, use gluten-free breadcrumbs.

  • These chips are best enjoyed fresh, as they lose crispiness over time.
