Ambrosia Salad is a creamy and fruity dessert made with a medley of fruits, marshmallows, and a sweet, tangy dressing. It’s a nostalgic treat perfect for holidays, potlucks, or as a light dessert.

  • 1 cup mini marshmallows
  • 1 cup sour cream (or Greek yogurt for a lighter option)
  • 1 cup sweetened shredded coconut
  • 1 can (20 oz) pineapple chunks (drained)
  • 1 can (15 oz) mandarin oranges (drained)
  • 1 cup maraschino cherries (drained and halved)
  • 1 cup seedless grapes (halved, optional)
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  • Prepare the Ingredients:
    • Drain the pineapple chunks, mandarin oranges, and maraschino cherries thoroughly to prevent the salad from becoming watery.
  • Mix the Dressing:
    • In a large mixing bowl, combine the sour cream and shredded coconut. Stir until evenly blended.
  • Combine the Salad:
    • Add the pineapple chunks, mandarin oranges, cherries, mini marshmallows, and grapes (if using) to the bowl. Gently fold the ingredients into the sour cream mixture to avoid breaking the fruit.
  • Chill:
    • Cover the bowl with plastic wrap and refrigerate for at least 2 hours (or overnight) to allow the flavors to meld and the salad to chill.
  • Serve:
    • Before serving, sprinkle with chopped pecans or walnuts for added crunch, if desired. Serve cold.

Notes

  • For added sweetness, mix in 1-2 tablespoons of powdered sugar or whipped topping.
