Ingredients
Scale
1 cup mini marshmallows
1 cup sour cream (or Greek yogurt for a lighter option)
1 cup sweetened shredded coconut
1 can (20 oz) pineapple chunks (drained)
1 can (15 oz) mandarin oranges (drained)
1 cup maraschino cherries (drained and halved)
1 cup seedless grapes (halved, optional)
1/2 cup chopped pecans or walnuts (optional)
Instructions
Prepare the Ingredients:
Drain the pineapple chunks, mandarin oranges, and maraschino cherries thoroughly to prevent the salad from becoming watery.
Mix the Dressing:
In a large mixing bowl, combine the sour cream and shredded coconut. Stir until evenly blended.
Combine the Salad:
Add the pineapple chunks, mandarin oranges, cherries, mini marshmallows, and grapes (if using) to the bowl. Gently fold the ingredients into the sour cream mixture to avoid breaking the fruit.
Chill:
Cover the bowl with plastic wrap and refrigerate for at least 2 hours (or overnight) to allow the flavors to meld and the salad to chill.
Serve:
Before serving, sprinkle with chopped pecans or walnuts for added crunch, if desired. Serve cold.
Notes
For added sweetness, mix in 1-2 tablespoons of powdered sugar or whipped topping.
Ambrosia salad can be made up to a day in advance and stored in the refrigerator.
Feel free to add or swap fruits like diced apples, fresh strawberries, or blueberries.
