Amish Harvest Casserole is a hearty, comforting dish filled with seasonal vegetables, tender ground beef, rice, and a creamy sauce. It’s a simple, all-in-one meal that’s perfect for cozy family dinners or potlucks.

  • For the casserole:
    • 1 lb (450 g) ground beef or turkey
    • 1 medium onion, diced
    • 2 cloves garlic, minced
    • 1 medium zucchini, diced
    • 1 medium carrot, grated
    • 1 cup (150 g) cooked rice (white or brown)
    • 1 cup (120 g) shredded cheddar cheese
    • 1 cup (240 ml) cream of mushroom soup (or cream of chicken soup)
    • 1/2 cup (120 ml) milk
    • 1 teaspoon dried thyme or Italian seasoning
    • Salt and black pepper, to taste
  • For topping (optional):
    • 1/2 cup (50 g) breadcrumbs
    • 2 tablespoons melted butter
    • 1/4 cup (25 g) shredded Parmesan cheese

Instructions

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. Cook the ground meat:
    • In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain any excess fat. Add the onion and garlic and cook for 2-3 minutes until softened.
  3. Prepare the vegetable mixture:
    • Add the zucchini and carrot to the skillet with the meat mixture. Cook for another 3-4 minutes until the vegetables are tender. Season with salt, pepper, and thyme.
  4. Combine the casserole:
    • In a large mixing bowl, combine the cooked rice, meat and vegetable mixture, cream of mushroom soup, milk, and shredded cheddar cheese. Mix until evenly combined.
  5. Assemble in the baking dish:
    • Spread the mixture evenly in the prepared baking dish.
  6. Add the topping (optional):
    • In a small bowl, mix the breadcrumbs with melted butter and Parmesan cheese. Sprinkle the topping evenly over the casserole.
  7. Bake:
    • Bake in the preheated oven for 25-30 minutes, or until bubbly and golden on top.
  8. Serve:
    • Let cool for a few minutes before serving. Garnish with fresh parsley if desired.

  • Substitute ground meat with cooked shredded chicken for a different twist.
