Antipasto Tortellini Skewers with Lemon Basil Vinaigrette are vibrant and easy-to-assemble appetizers featuring cheese tortellini, cured meats, olives, and vegetables. They’re finished with a zesty lemon basil vinaigrette for the perfect party bite or picnic snack.

Ingredients

  • 1 (9 oz) package cheese tortellini, cooked and cooled
  • 12 slices salami or pepperoni, folded
  • 12 small mozzarella balls (bocconcini)
  • 12 cherry tomatoes
  • 12 pitted olives (green or black)
  • 12 artichoke hearts (marinated, optional)
  • Fresh basil leaves
  • Skewers or toothpicks
  • For the lemon basil vinaigrette:
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp chopped fresh basil
  • 1/2 tsp Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. Cook tortellini according to package instructions. Rinse with cold water and drain. Set aside to cool completely.
  2. In a small bowl, whisk together all vinaigrette ingredients until well combined. Set aside.
  3. On each skewer, thread one tortellini, a folded slice of salami, a basil leaf, a mozzarella ball, a tomato, and an olive or artichoke heart in desired order.
  4. Arrange skewers on a platter and drizzle with the lemon basil vinaigrette just before serving.
  5. Chill for 15–30 minutes before serving for enhanced flavor.

Notes

  • Can be assembled up to 1 day in advance; add vinaigrette right before serving.
  • Substitute ingredients to fit your preferences—use prosciutto, roasted peppers, or cucumber slices.
  • For a vegetarian version, omit the meat and add more veggies.
  • Mini skewers or toothpicks make these bite-size and party friendly.
