Ingredients

Scale
  • 4 cups fresh or frozen fruit (apples, berries, peaches, or a mix)
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
  2. In a large bowl, combine fruit, granulated sugar, lemon juice, cornstarch, and vanilla. Mix well and pour into the prepared baking dish.
  3. In a separate bowl, mix oats, flour, brown sugar, cinnamon, and salt. Stir in melted butter until mixture is crumbly.
  4. Sprinkle the oat topping evenly over the fruit.
  5. Bake for 35–40 minutes, or until fruit is bubbling and topping is golden brown.
  6. Let cool slightly before serving. Best served warm with vanilla ice cream or whipped cream.

Notes

  • Use a mix of sweet and tart fruits for more depth of flavor.
  • If using frozen fruit, thaw and drain excess liquid before baking.
  • Add chopped nuts like pecans or walnuts to the topping for extra crunch.
  • Store leftovers in the fridge and reheat in the oven or microwave.
