This Apple Cake is a moist and tender dessert filled with fresh apples and warm spices. Topped with a light dusting of powdered sugar or a drizzle of caramel sauce, this easy cake is perfect for fall gatherings, coffee breaks, or as a comforting dessert any time of the year.

  • 2 large eggs

  • 1/2 cup Greek yogurt or sour cream
  • 1/2 cup milk
  • 2 cups apples, peeled, cored, and diced (about 2 medium apples)
  • 1/2 cup chopped walnuts or pecans (optional)

  • Powdered sugar for dusting
  • Caramel sauce for drizzling

Instructions

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or a 9×9-inch square baking pan.

  2. Mix Dry Ingredients:
    In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.

  3. Prepare the Wet Ingredients:
    In a large mixing bowl, beat together softened butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Mix in vanilla extract.

  4. Combine Wet and Dry Ingredients:
    Gradually add the dry ingredients to the wet mixture, alternating with Greek yogurt and milk. Mix until just combined—do not overmix.

  5. Add Apples and Nuts:
    Fold in the diced apples and chopped nuts (if using) until evenly distributed.

  6. Bake the Cake:
    Pour the batter into the prepared pan and smooth the top. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.

  7. Cool and Serve:
    Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Dust with powdered sugar or drizzle with caramel sauce before serving.
