Apple Cider Pork Chops are a flavorful autumn-inspired dish featuring tender pork chops simmered in a sweet and savory apple cider sauce with hints of thyme, garlic, and Dijon mustard.
Season pork chops on both sides with salt and pepper.
Heat olive oil and butter in a large skillet over medium-high heat. Add pork chops and sear for 3–4 minutes per side until golden brown. Remove from skillet and set aside.
Add onions to the same skillet and sauté until softened, about 4 minutes. Add garlic and cook for 1 minute more.
Pour in apple cider and stir in Dijon mustard and thyme. Bring to a simmer.
Return pork chops to the skillet and add sliced apples. Cover and simmer for 10–12 minutes, or until pork is cooked through (145°F internal temp).
If desired, mix cornstarch and water in a small bowl and stir into the sauce to thicken. Simmer for 2–3 more minutes.
Serve pork chops with apple-onion mixture and spoon sauce over the top.
Notes
Use fresh apple cider for best flavor—not apple cider vinegar.
This dish pairs wonderfully with mashed potatoes, wild rice, or roasted vegetables.
Substitute pork chops with chicken breasts if desired—adjust cook time accordingly.
