These Apple Cider Whoopie Pie Cookies feature soft, cake-like spiced cookies made with apple cider reduction, sandwiched together with a fluffy cinnamon cream cheese filling. They’re the ultimate fall treat—perfect for Thanksgiving, Halloween, or any cozy gathering!

For the Cookies:

  • 1 cup apple cider (to reduce to ¼ cup)
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup applesauce

For the Cinnamon Cream Cheese Filling:

 

  • 4 oz cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1½ cups powdered sugar
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla extract

Instructions

Reduce the Apple Cider:

  1. Simmer the cider in a small saucepan over medium heat until it reduces to ¼ cup (about 10-15 minutes). Let cool completely.

Make the Cookies:

  1. Preheat & Prep: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. Cream Butter & Sugar: In another bowl, beat butter and brown sugar until light and fluffy (about 2 minutes).
  4. Add Wet Ingredients: Mix in the egg, vanilla, applesauce, and cooled apple cider reduction.
  5. Combine Wet & Dry: Gradually add dry ingredients to the wet mixture, stirring until just combined.
  6. Scoop & Bake: Drop tablespoon-sized scoops onto the baking sheet, spacing them 2 inches apart. Bake for 10-12 minutes, until the tops are set. Let cool completely.

Make the Filling:

  1. Beat Butter & Cream Cheese: In a bowl, beat cream cheese and butter until smooth.
  2. Add Powdered Sugar & Cinnamon: Mix in powdered sugar, cinnamon, and vanilla until fluffy.

Assemble the Whoopie Pies:

  1. Fill the Cookies: Pipe or spread 1 tablespoon of filling onto the flat side of one cookie. Top with another cookie and gently press together.
  2. Chill & Serve: Refrigerate for 30 minutes for the best texture, or serve immediately!

Notes

  • For extra apple flavor, mix 1 tablespoon apple butter into the filling.
  • Want a firmer filling? Add ½ cup more powdered sugar to stiffen the cream cheese frosting.
  • Storage: Store in an airtight container in the fridge for up to 5 days or freeze for up to 2 months.
