These Apple Oatmeal Cookies are soft, chewy, and packed with juicy apple pieces, hearty oats, and warm cinnamon. They’re like apple pie in cookie form—perfect for fall or anytime you want a comforting treat!

  • 1 ½ cups old-fashioned rolled oats
  • 1 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg (optional)
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup diced apple (peeled, Granny Smith or Honeycrisp work best)
  • ½ cup chopped walnuts or pecans (optional)

 

  • ½ cup raisins or dried cranberries (optional)

Instructions

Step 1: Preheat & Prep

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2: Mix the Dry Ingredients

  1. In a medium bowl, whisk together oats, flour, baking soda, salt, cinnamon, and nutmeg.

Step 3: Make the Dough

  1. In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy (about 2 minutes).
  2. Mix in egg and vanilla extract until smooth.
  3. Gradually add dry ingredients, stirring until just combined.
  4. Fold in diced apples, nuts, and raisins (if using).

Step 4: Bake the Cookies

  1. Scoop tablespoon-sized dough balls onto the baking sheet, spacing them 2 inches apart.
  2. Bake for 12-14 minutes, until edges are golden brown but centers are still soft.
  3. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

  • For extra chewiness, refrigerate the dough for 30 minutes before baking.
  • Storage: Keep in an airtight container for up to 4 days, or freeze for up to 2 months.
