6 cups peeled, cored, and sliced apples (Granny Smith or Honeycrisp)
3/4 cup granulated sugar
1/4 cup brown sugar
1/4 cup cornstarch
1 1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/8 tsp salt
2 tbsp lemon juice
1 1/2 cups water
1 tsp vanilla extract
Instructions
In a large saucepan, combine water, granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, and salt. Whisk until smooth.
Bring the mixture to a boil over medium heat, stirring constantly until thickened and bubbly.
Add sliced apples and lemon juice. Reduce heat to medium-low and cook for 10–15 minutes, stirring occasionally, until apples are tender but not mushy.
Remove from heat and stir in vanilla extract.
Let the filling cool before using in pies, or store in an airtight container in the fridge for up to 5 days.
