This apple salad is crisp, refreshing, and perfect as a side dish or a light dessert. Combining sweet apples, crunchy nuts, and a creamy dressing, it’s a simple yet delicious dish ideal for any occasion.

Ingredients

Scale

For the salad:

  • 4 medium apples (Granny Smith, Honeycrisp, or a mix), diced
  • 1/2 cup (50 g) celery, thinly sliced
  • 1/2 cup (60 g) chopped walnuts or pecans
  • 1/4 cup (40 g) dried cranberries or raisins (optional)
  • 1/4 cup (25 g) shredded sharp cheddar cheese (optional)

For the dressing:

  • 1/2 cup (120 g) Greek yogurt or mayonnaise
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lemon juice (to prevent the apples from browning)
  • Pinch of salt

Instructions

  1. Prepare the apples:
    • Wash, core, and dice the apples into bite-sized pieces. Toss them with the lemon juice in a large bowl to keep them fresh and crisp.
  2. Make the dressing:
    • In a small bowl, whisk together the Greek yogurt (or mayonnaise), honey, and a pinch of salt.
  3. Combine the salad:
    • Add the celery, walnuts, cranberries (or raisins), and optional cheddar cheese to the apples. Pour the dressing over the mixture and toss gently to coat evenly.
  4. Serve:
    • Transfer the salad to a serving dish and garnish with extra nuts or cranberries, if desired. Serve immediately or chill in the refrigerator for up to 2 hours before serving.

Notes

  • For added texture, sprinkle sunflower seeds or pumpkin seeds on top.
  • Substitute yogurt with a dairy-free alternative for a vegan-friendly version.
  • This salad is best enjoyed fresh, but leftovers can be stored in the refrigerator for up to 1 day.
