1 lb ground turkey
1 tablespoon sesame oil
1 small onion, finely diced
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 cup shredded carrots
1/2 cup water chestnuts, diced (optional but recommended)
2 green onions, chopped
1/4 cup low-sodium soy sauce
2 tablespoons hoisin sauce
1 tablespoon rice vinegar
1 teaspoon sriracha or chili garlic sauce (optional, for heat)
Salt and pepper, to taste
For Serving:
1 head butter lettuce or romaine (leaves separated and washed)
Chopped peanuts or cashews (optional, for topping)
Extra green onions or sesame seeds for garnish
Cook the Filling:
Heat sesame oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 3 minutes.
Add garlic and ginger, sauté for 30 seconds.
Add ground turkey, breaking it up as it cooks. Cook until browned and no longer pink.
Add the Sauce & Veggies:
Stir in soy sauce, hoisin, rice vinegar, and sriracha. Add shredded carrots and water chestnuts. Cook for another 2–3 minutes until everything is coated and heated through.
Assemble Wraps:
Spoon warm turkey mixture into lettuce leaves. Top with chopped peanuts, green onions, or sesame seeds if desired.
