This Bacon Cheeseburger Grilled Cheese combines the best of both worlds—a juicy cheeseburger and a gooey grilled cheese. Loaded with crispy bacon, seasoned ground beef, and melty cheese, it’s the ultimate comfort food for any occasion.

For the filling:

  • 1/2 lb (225 g) ground beef
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika (optional)
  • Salt and pepper, to taste
  • 4 slices of cooked bacon, crumbled or halved
  • 4 slices of cheddar cheese (or your preferred cheese)

For the grilled cheese:

  • 8 slices of bread (sourdough, white, or brioche work well)
  • 4 tablespoons (60 g) butter, softened
  • 2 tablespoons mayonnaise (optional, for spreading)

Optional toppings:

  • Pickles, thinly sliced
  • Ketchup or mustard
  • Thinly sliced onions


Instructions

  1. Cook the ground beef:
    • Heat a skillet over medium heat. Add the ground beef and cook, breaking it up with a spatula, until browned and fully cooked.
    • Season with garlic powder, onion powder, smoked paprika (if using), salt, and pepper. Remove from heat and drain any excess fat.
  2. Assemble the sandwiches:
    • Butter one side of each slice of bread. If using mayonnaise, spread it on the opposite side of the bread slices.
    • Place a slice of cheese on the unbuttered side of one piece of bread. Top with a portion of the cooked ground beef, crumbled bacon, and optional toppings like pickles or onions. Add another slice of cheese and top with a second slice of bread, buttered side facing out. Repeat for all sandwiches.
  3. Cook the grilled cheese:
    • Heat a clean skillet or griddle over medium heat. Place the assembled sandwiches in the skillet and cook until the bread is golden brown and crispy, about 3-4 minutes per side. Press gently with a spatula to help the cheese melt evenly.
  4. Serve:
    • Slice the sandwiches in half and serve immediately with ketchup, mustard, or your favorite dipping sauce.
