These Bacon Green Bean Bundles are a delicious and visually stunning side dish or appetizer. Tender green beans are wrapped in crispy bacon and glazed with a sweet and savory sauce, making them perfect for holiday dinners or special occasions.

  • 1 lb (450 g) fresh green beans, trimmed
  • 8 slices of bacon (thin-cut works best)
  • 2 tbsp olive oil
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1 tbsp melted butter
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp salt

Instructions

  1. Prepare the green beans:
    • Preheat your oven to 400°F (200°C).
    • Bring a large pot of salted water to a boil. Blanch the green beans for 3-4 minutes, then drain and immediately transfer to a bowl of ice water to stop the cooking process. Pat dry with a paper towel.
  2. Make the bundles:
    • Gather 6-8 green beans and wrap them tightly with a slice of bacon, securing it with a toothpick if needed. Repeat with the remaining green beans and bacon. Place the bundles on a baking sheet lined with parchment paper or a lightly greased baking rack.
  3. Prepare the glaze:
    • In a small bowl, whisk together the olive oil, brown sugar, soy sauce, melted butter, garlic powder, pepper, and salt.
  4. Glaze and bake:
    • Brush each bundle generously with the glaze. Bake in the preheated oven for 20-25 minutes, or until the bacon is crispy and the green beans are tender.
  5. Serve:
    • Remove the bundles from the oven and let them cool slightly. Transfer to a serving platter and enjoy warm.

Notes

  • For extra crispiness, broil the bundles for 1-2 minutes at the end of baking.
