Bacon Salad is a savory, flavor-packed dish that brings together crispy bacon, fresh greens, and a tangy vinaigrette. It’s simple, satisfying, and great on its own or topped with a fried egg, grilled chicken, or avocado for a full meal. Think of it as comfort food in salad form!

Ingredients

  • 6 slices bacon, cooked and crumbled

  • 6 cups mixed greens (like romaine, spinach, or arugula)

  • 1/2 red onion, thinly sliced

  • 1 cup cherry tomatoes, halved

  • 1/2 cucumber, sliced

  • 1/2 cup shredded cheddar or crumbled blue cheese (optional)

  • 2 hard-boiled eggs, sliced (optional)

For the Dressing:

  • 3 tablespoons bacon drippings (or olive oil if preferred)

  • 2 tablespoons apple cider vinegar

  • 1 teaspoon Dijon mustard

  • 1 teaspoon honey or maple syrup

  • Salt and black pepper, to taste

Instructions

  1. Cook the bacon: In a skillet over medium heat, cook bacon until crispy. Transfer to paper towels to drain and crumble once cooled. Reserve 3 tablespoons of the drippings for the dressing.

  2. Make the dressing: In a small bowl, whisk together bacon drippings, vinegar, mustard, honey, salt, and pepper until smooth.

  3. Assemble the salad: In a large bowl, combine greens, onion, tomatoes, cucumber, cheese (if using), and eggs.

  4. Add bacon and dressing: Sprinkle crumbled bacon on top. Drizzle with dressing and toss gently to coat.

  5. Serve immediately: Best enjoyed fresh while the bacon is still slightly warm.

  • For a warm bacon dressing, heat the vinaigrette briefly in the pan before pouring over the salad.
