These Baked Apple Fritters are a healthier twist on the classic fried version, with tender chunks of apple, warm cinnamon spices, and a sweet glaze. Perfect for breakfast or as a cozy fall dessert.

Makes about 10 fritters

  • For the fritters:
    • 1 3/4 cups (220 g) all-purpose flour
    • 1/4 cup (50 g) granulated sugar
    • 2 teaspoons baking powder
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon nutmeg (optional)
    • 1/2 teaspoon salt
    • 2/3 cup (160 ml) whole milk
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 2 tablespoons unsalted butter, melted
    • 1 1/2 cups (180 g) peeled and diced apples (Granny Smith or Honeycrisp)
  • For the glaze:
    • 1 cup (120 g) powdered sugar
    • 2 tablespoons milk
    • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the fritter batter:
    • In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
    • In a separate bowl, mix the milk, eggs, vanilla extract, and melted butter until combined.
    • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Gently fold in the diced apples.
  3. Shape the fritters:
    • Scoop about 1/4 cup of batter per fritter onto the prepared baking sheet, leaving space between each one. Use the back of a spoon to slightly flatten and shape them.
  4. Bake the fritters:
    • Bake for 14-16 minutes, or until the fritters are lightly golden and a toothpick inserted into the center comes out clean. Let them cool slightly on the baking sheet.
  5. Make the glaze:
    • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  6. Glaze the fritters:
    • Drizzle or brush the glaze over the warm fritters. Let the glaze set for a few minutes before serving.

Notes

  • For an extra burst of flavor, toss the diced apples in a bit of lemon juice and cinnamon before folding them into the batter.
  • Store leftover fritters in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days. Reheat in the oven or microwave for a warm treat.
  • For a crunchier texture, sprinkle a little turbinado sugar on top of the fritters before baking.
