Baked Artichokes with Honey Whipped Feta is a savory-sweet appetizer or side dish featuring tender roasted artichokes served with a creamy, tangy whipped feta blended with honey. It’s a Mediterranean-inspired dish perfect for entertaining or elegant snacking.

  • 2 large artichokes, trimmed and halved
  • 2 tbsp olive oil
  • 1 lemon, halved (for rubbing and roasting)
  • Salt and pepper, to taste
  • For the honey whipped feta:
  • 1 cup crumbled feta cheese
  • 1/4 cup Greek yogurt or cream cheese
  • 1 tbsp honey (plus more for drizzling)
  • 1 tbsp olive oil
  • 1/2 tsp lemon zest
  • Black pepper, to taste
  • Fresh herbs (parsley or dill), for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Rub artichoke halves with lemon and place cut-side up on a baking dish.
  2. Drizzle with olive oil and season with salt and pepper. Add lemon halves to the dish and cover tightly with foil.
  3. Bake for 35–45 minutes, or until tender and edges are golden. Uncover during the last 10 minutes for browning.
  4. Meanwhile, in a food processor or blender, blend feta, yogurt (or cream cheese), honey, olive oil, lemon zest, and black pepper until smooth and creamy.
  5. Spread whipped feta on a serving plate or in a bowl. Drizzle with extra honey and a sprinkle of herbs.
  6. Serve warm roasted artichokes with the whipped feta for dipping or spreading.

  • Use marinated artichoke hearts for a shortcut—just roast briefly to warm and crisp edges.
  • Adjust honey to taste depending on saltiness of feta.
  • Pairs well with crusty bread or crackers if serving as an appetizer spread.
