4 salmon fillets (about 6 oz each)
1 tablespoon olive oil
2 tablespoons blackening seasoning
1 ripe mango, diced
1 ripe avocado, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 tablespoon lime juice
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Brush salmon fillets with olive oil and rub with blackening seasoning on all sides.
Place salmon on the prepared baking sheet and bake for 12–15 minutes, or until the salmon flakes easily with a fork.
While the salmon bakes, prepare the salsa by combining mango, avocado, red onion, cilantro, lime juice, salt, and pepper in a medium bowl. Gently toss to combine.
Remove salmon from the oven and let it rest for 2–3 minutes.
Top each fillet with a generous spoonful of mango avocado salsa before serving.
Notes
Use a firm but ripe mango and avocado for the best salsa texture.
The salsa can be made up to 1 hour ahead and chilled.
