Ingredients

Scale
  • 2 cups cooked shredded chicken (rotisserie chicken works great)
  • 8 oz cream cheese, softened
  • ½ cup buffalo sauce (like Frank’s RedHot)
  • ½ cup ranch dressing (or blue cheese dressing if preferred)
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup crumbled blue cheese (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons chopped green onions (for garnish)

Instructions

  1. Preheat Oven:

    • Preheat your oven to 375°F (190°C).
    • Lightly grease a 9-inch baking dish or cast-iron skillet.
  2. Mix the Dip:

    • In a large mixing bowl, combine cream cheese, buffalo sauce, ranch dressing, garlic powder, and onion powder until smooth and creamy.
    • Stir in shredded chicken, cheddar cheese, and mozzarella cheese until well combined.
  3. Bake:

    • Spread the mixture evenly into the prepared baking dish.
    • Top with extra cheddar cheese and crumbled blue cheese (if using).
    • Bake for 20-25 minutes or until hot and bubbly around the edges.
  4. Garnish and Serve:

    • Remove from the oven and let cool slightly.
    • Garnish with chopped green onions and serve with tortilla chips, celery sticks, carrots, or crusty bread.

Notes

  • Swap ranch dressing for blue cheese dressing for a more traditional buffalo wing flavor.
  • Use leftover grilled chicken, poached chicken, or canned chicken for convenience.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days and reheat in the oven or microwave.
