Baked Burritos are a hearty and flavorful meal made by filling tortillas with seasoned meat, beans, and cheese, then baking them until golden and crispy. Perfect for weeknight dinners or make-ahead freezer meals.

Ingredients

  • 1 lb ground beef or shredded chicken
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (15 oz) refried beans
  • 1 cup cooked rice (optional)
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 6 large flour tortillas
  • 1 cup enchilada sauce or salsa (optional)
  • Cooking spray or olive oil for brushing

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish or line with parchment paper.
  2. In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  3. Add taco seasoning and water. Simmer for 5 minutes, then stir in refried beans and rice if using.
  4. Spoon filling mixture into the center of each tortilla, sprinkle with cheese, and roll up burrito-style.
  5. Place burritos seam-side down in the baking dish. Brush tops with oil or spray with cooking spray.
  6. Bake for 20–25 minutes until heated through and lightly crispy.
  7. Optional: Pour enchilada sauce or salsa over burritos before baking for a saucy version.
  8. Serve with sour cream, guacamole, or your favorite toppings.
