2 cups cooked, shredded chicken
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup salsa
1/2 teaspoon chili powder
1/4 teaspoon cumin
1/4 teaspoon garlic powder
Salt and pepper to taste
6 large flour tortillas
1 tablespoon olive oil or melted butter (for brushing)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
In a large bowl, combine shredded chicken, cheddar cheese, Monterey Jack cheese, salsa, chili powder, cumin, garlic powder, salt, and pepper. Mix well.
Lay out the tortillas and evenly divide the filling on one half of each tortilla. Fold the tortillas in half to form a half-moon shape.
Place the quesadillas on the prepared baking sheet and lightly brush the tops with olive oil or melted butter.
Bake for 8–10 minutes, then flip and bake for another 5–7 minutes, or until golden and crispy.
Remove from the oven, let cool slightly, then slice and serve with sour cream, guacamole, or salsa.
Notes
Use rotisserie chicken for quick prep.
Add sautéed onions, peppers, or beans for extra flavor and texture.
Can be made ahead and frozen before baking for a quick meal later.
