  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano (or Italian seasoning)
  • ½ teaspoon cayenne pepper (optional, for spice)
  • 1 tablespoon fresh lemon juice (optional, for brightness)

Instructions

  1. Preheat & Prepare:

    • Preheat oven to 400°F (200°C).
    • Pat chicken thighs dry with paper towels for extra crispy skin.
  2. Season the Chicken:

    • In a small bowl, mix salt, black pepper, garlic powder, onion powder, smoked paprika, oregano, and cayenne (if using).
    • Drizzle chicken with olive oil and rub seasoning all over, making sure to coat evenly.
  3. Bake:

    • Place chicken thighs skin-side up on a baking sheet or in a cast-iron skillet.
    • Bake for 35-40 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
  4. Broil for Extra Crispiness (Optional):

    • For extra crispy skin, broil on high for the last 2-3 minutes, watching carefully.
