Ingredients

Scale

Serves 4

  • 4 medium russet potatoes, washed and cut into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup (50 g) grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the potato wedges:
    • Cut each potato into 8 wedges and place them in a large bowl.
  3. Season the wedges:
    • Drizzle the olive oil over the potato wedges. Add garlic powder, paprika, oregano, salt, black pepper, and half of the grated Parmesan cheese. Toss until the wedges are evenly coated.
  4. Arrange and bake:
    • Arrange the seasoned wedges in a single layer on the prepared baking sheet, skin-side down for maximum crispiness.
    • Bake for 35-40 minutes, flipping halfway through, until golden brown and crispy.
  5. Add the Parmesan topping:
    • Remove the wedges from the oven and sprinkle the remaining Parmesan cheese over them while still hot.
  6. Serve:
    • Garnish with fresh parsley and serve immediately with your favorite dipping sauce, such as ranch or garlic aioli.

Notes

  • For extra crispiness, soak the potato wedges in cold water for 30 minutes before seasoning, then dry thoroughly.
  • Substitute sweet potatoes for a slightly different flavor profile.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer for best results.
