Baked Halibut with Potatoes is a wholesome and flavorful dish featuring tender halibut fillets and roasted potatoes seasoned with herbs, garlic, and lemon.

Ingredients

  • 4 halibut fillets (6 oz each)
  • 1 1/2 pounds baby potatoes, halved
  • 3 tablespoons olive oil, divided
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 lemon, sliced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss halved potatoes with 2 tablespoons olive oil, garlic, thyme, oregano, salt, and pepper. Spread evenly on a baking sheet.
  3. Roast potatoes for 20 minutes, stirring once halfway through.
  4. Remove potatoes from oven and make space for the halibut fillets.
  5. Drizzle remaining olive oil over halibut and season with salt and pepper. Place lemon slices on top of each fillet.
  6. Return baking sheet to oven and bake for another 12–15 minutes, or until halibut is cooked through and flakes easily with a fork.
  7. Garnish with fresh parsley and serve warm.

  • Use parchment paper for easy cleanup.
  • Try adding other vegetables like cherry tomatoes or green beans for variety.
  • Adjust herbs and lemon to taste for extra brightness.
