Juicy and flavorful baked Italian chicken thighs seasoned with herbs and garlic, perfect for an easy weeknight dinner or a comforting family meal.

  • 8 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking dish with foil or lightly grease it.
  2. Pat chicken thighs dry with paper towels.
  3. In a small bowl, mix olive oil, Italian seasoning, garlic powder, onion powder, paprika, salt, and pepper.
  4. Rub the seasoning mixture all over the chicken thighs, coating evenly.
  5. Place the thighs skin-side up in the baking dish.
  6. Bake for 35–45 minutes, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
  7. Let rest for 5 minutes before serving. Garnish with chopped parsley if desired.

Notes

  • Use a meat thermometer for perfectly cooked chicken.
  • For crispier skin, broil for the last 2–3 minutes of baking.
  • Serve with roasted vegetables or mashed potatoes for a complete meal.
