A wholesome and comforting breakfast dish made with rolled oats, fresh blueberries, and sliced almonds, baked to golden perfection with a touch of cinnamon and vanilla.

Ingredients

  • 2 cups rolled oats
  • 1/2 cup sliced almonds
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 cups milk (dairy or non-dairy)
  • 1/4 cup maple syrup or honey
  • 1 large egg
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease an 8×8-inch or similar-sized baking dish.
  2. In a large bowl, mix together oats, almonds, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together milk, maple syrup (or honey), egg, melted butter (or coconut oil), and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until fully combined.
  5. Fold in the blueberries gently.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Bake for 35–40 minutes, or until the top is golden and the center is set.
  8. Let cool slightly before serving. Enjoy warm as is or with a splash of milk or yogurt.
