4 cod fillets (about 6 oz each)
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
2 tbsp olive oil
1 tsp garlic powder
1/2 tsp paprika
Salt and pepper to taste
1/4 cup all-purpose flour
1 egg, beaten
Lemon wedges, for serving
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
In a shallow bowl, mix panko, Parmesan, garlic powder, paprika, salt, pepper, and olive oil until well combined.
Place flour in a separate shallow bowl and beaten egg in another.
Pat cod fillets dry. Dredge each fillet in flour, dip into egg, and press into the panko mixture to coat both sides.
Place coated fillets on the prepared baking sheet.
Bake for 15-18 minutes, or until the cod is cooked through and the crust is golden and crisp.
Serve immediately with lemon wedges.
Notes
Use fresh or thawed cod for best texture.
For extra crunch, broil the last 1-2 minutes of baking.
Pairs well with a side salad or roasted vegetables.
