4 salmon fillets (about 6 oz each)
1/2 cup grated Parmesan cheese
1/3 cup panko breadcrumbs
2 tbsp chopped fresh parsley
2 cloves garlic, minced
2 tbsp olive oil
1 tbsp Dijon mustard
1 tbsp lemon juice
1/2 tsp salt
1/4 tsp black pepper
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Place salmon fillets skin-side down on the prepared baking sheet. Season with salt and pepper.
In a small bowl, mix Parmesan, panko breadcrumbs, parsley, and garlic.
In another bowl, whisk together olive oil, Dijon mustard, and lemon juice.
Brush the mustard mixture over the top of each salmon fillet.
Top evenly with the Parmesan breadcrumb mixture, pressing it down lightly to adhere.
Bake for 12-15 minutes, or until the salmon is cooked through and the crust is golden brown.
Serve immediately with lemon wedges, if desired.
Notes
Use fresh salmon for the best texture and flavor.
You can substitute regular breadcrumbs if panko is not available.
