  • 1 tablespoon cornstarch + 2 tablespoons water (for thickening, optional)
  • Fresh basil or parsley, for garnish


Instructions

  1. Prepare the ingredients: Place the chicken breasts in the slow cooker.
  2. Make the balsamic sauce: In a small bowl, mix balsamic vinegar, olive oil, honey, garlic, basil, oregano, thyme, salt, pepper, and red pepper flakes.
  3. Assemble: Pour the balsamic mixture over the chicken. Add the sliced onion and drained diced tomatoes.
  4. Slow cook: Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and easily shreds with a fork.
