This Balsamic Chicken Tortellini Salad is a hearty, flavor-packed pasta salad that’s perfect for lunch, dinner, or a make-ahead party dish. Juicy balsamic-marinated chicken, cheesy tortellini, cherry tomatoes, fresh spinach, and a sweet-tangy balsamic dressing come together in one satisfying bowl.
1 (9 oz) package refrigerated cheese tortellini
2 cups cooked chicken breast, diced or sliced
1 cup cherry tomatoes, halved
1 cup baby spinach
1/4 cup red onion, thinly sliced
1/4 cup shredded Parmesan cheese
1/4 cup balsamic vinaigrette dressing (store-bought or homemade)
1 tablespoon olive oil (for cooking chicken if needed)
Salt and pepper to taste
Optional for garnish:
Fresh basil or parsley, chopped
Cook tortellini according to package directions. Drain and rinse with cold water to cool.
If chicken isn’t already cooked, season with salt and pepper and cook in olive oil over medium heat until done. Let cool, then slice or dice.
In a large bowl, combine tortellini, chicken, cherry tomatoes, spinach, red onion, and Parmesan.
