This Balsamic Pear and Cranberry Salad is a refreshing mix of crisp greens, juicy pears, tart cranberries, and crunchy nuts, all tossed in a delicious balsamic dressing. It’s perfect as a side dish or a light, healthy meal!

  • 6 cups mixed greens (such as spinach, arugula, or spring mix)
  • 2 ripe pears, thinly sliced
  • ½ cup dried cranberries
  • ¼ cup red onion, thinly sliced
  • ½ cup crumbled goat cheese (or feta)
  • ½ cup candied pecans (or walnuts)

For the Balsamic Dressing:

  • ¼ cup balsamic vinegar
  • â…“ cup extra virgin olive oil
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

 

Instructions

  1. Make the Dressing:

    • In a small bowl or jar, whisk together balsamic vinegar, olive oil, honey, Dijon mustard, salt, and pepper until well combined. Set aside.
  2. Assemble the Salad:

    • In a large bowl, add the mixed greens.
    • Top with sliced pears, dried cranberries, red onion, goat cheese, and candied pecans.
  3. Dress and Serve:

    • Drizzle the balsamic dressing over the salad just before serving.
    • Toss gently to combine and enjoy!
