  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon (optional)
  • ½ cup chopped walnuts or chocolate chips (optional)

Instructions

Step 1: Preheat the Oven

  1. Preheat oven to 350°F (175°C).
  2. Line a 12-cup muffin tin with liners or lightly grease with nonstick spray.

Step 2: Mix Wet Ingredients

  1. In a large bowl, whisk together mashed bananas, melted butter, granulated sugar, brown sugar, eggs, and vanilla until smooth.

Step 3: Mix Dry Ingredients

  1. In another bowl, whisk together flour, baking soda, salt, and cinnamon.

Step 4: Combine Batter

  1. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  2. If using, fold in chopped walnuts or chocolate chips.

Step 5: Fill & Bake

  1. Divide the batter evenly into the muffin cups, filling each about ¾ full.
  2. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

Step 6: Cool & Serve

  1. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.
  2. Serve warm or store in an airtight container for up to 5 days.
