This Banana Bread Pudding is rich, warm, and packed with caramelized banana flavor. Made with soft bread, cinnamon-spiced custard, and baked to perfection, it’s a cozy dessert that pairs beautifully with caramel sauce or whipped cream!

For the Bread Pudding:
  • 4 cups cubed bread (French bread, brioche, or challah)
  • 2 ripe bananas, mashed
  • 2 cups whole milk
  • ½ cup heavy cream
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • 2 tablespoons unsalted butter, melted
For the Topping (Optional):
  • 1 banana, sliced
  • ¼ cup chopped pecans or walnuts
  • Caramel sauce or powdered sugar (for serving)

Instructions


  1. Preheat oven
     to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. Prepare the bread – Spread bread cubes evenly in the dish.
  3. Make the custard – In a bowl, whisk together mashed bananas, milk, heavy cream, sugars, eggs, vanilla, cinnamon, nutmeg, and salt.
  4. Assemble – Pour the custard over the bread, pressing down to soak. Let sit for 10 minutes.
  5. Bake – Drizzle melted butter over the top. Bake for 40-45 minutes, until golden and set.
  6. Garnish & serve – Top with banana slices and pecans. Serve warm with caramel sauce or powdered sugar.

Notes


  • Best Bread:
     Slightly stale bread works best for soaking up custard.
  • Dairy-Free Option: Use almond milk and coconut cream.
  • Make It Boozy: Add 1 tablespoon rum or bourbon for extra depth.
