  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

For the Pudding:

  • 1 (5 oz/140 g) package instant vanilla pudding mix
  • 2 cups (480 ml) cold milk
  • 1 (14 oz/400 g) can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (360 ml) heavy cream, whipped

For Assembly:

  • 1 box (12 oz/340 g) vanilla wafers
  • Additional sliced bananas for layering (optional)
  • Whipped cream and caramel sauce for garnish


Instructions

Prepare the Bananas Foster:

  1. Caramelize the Bananas:
    • In a large skillet, melt the butter over medium heat. Add the brown sugar, cinnamon, and salt, stirring until the sugar dissolves and forms a sauce.
  2. Add the Bananas:
    • Gently fold in the banana slices, cooking for 1–2 minutes until they are caramelized and softened.
  3. Flambé (Optional):
    • If using rum, remove the skillet from the heat, pour in the rum, and carefully ignite it with a long lighter or match. Let the flames subside naturally.
  4. Cool:
    • Remove the skillet from heat and let the mixture cool completely.

Prepare the Pudding Base:

  1. Mix the Pudding:
    • In a large bowl, whisk together the instant pudding mix, milk, and sweetened condensed milk until smooth. Let it set for 5 minutes.
  2. Fold in the Cream:
    • Gently fold the whipped cream into the pudding mixture until fully combined and fluffy.

Assemble the Dessert:

  1. Layer the Pudding:
    • In a trifle dish or large serving bowl, create layers:
      • Start with a layer of vanilla wafers.
      • Add a layer of pudding.
      • Spoon over a portion of the cooled bananas foster mixture.
      • Add sliced bananas (optional).
  2. Repeat Layers:
    • Repeat the layers until all the ingredients are used, finishing with a layer of pudding on top.

Chill and Serve:

  1. Chill:
    • Cover the dish and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the wafers to soften.
  2. Garnish and Serve:
    • Just before serving, top with whipped cream, a drizzle of caramel sauce, and a sprinkle of crushed vanilla wafers or a few caramelized banana slices for an elegant touch.
