2 chicken breasts, cut into bite-sized pieces
1/2 cup buttermilk
1/2 cup cornstarch
1/2 cup all-purpose flour
1/4 tsp salt
1/4 tsp black pepper
Vegetable oil, for frying
1/2 cup mayonnaise
2 tbsp sweet chili sauce
1 tbsp Sriracha sauce
1 tbsp honey
1 cup shredded lettuce
1/2 cup shredded carrots
1/4 cup chopped green onions
Sesame seeds, for garnish
Instructions
In a bowl, marinate chicken pieces in buttermilk for 15-20 minutes.
In a separate bowl, mix flour, cornstarch, salt, and pepper.
Heat oil in a deep skillet over medium-high heat.
Remove chicken from buttermilk and dredge in the flour mixture until well coated.
Fry chicken in batches until golden and cooked through, about 5-6 minutes. Drain on paper towels.
In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and honey to make the Bang Bang sauce.
Toss the fried chicken pieces in the sauce until fully coated.
Divide cooked rice among bowls. Top with shredded lettuce, carrots, and sauced chicken.
Garnish with chopped green onions and sesame seeds before serving.
Notes
Use air-fried or grilled chicken for a lighter option.
You can substitute Greek yogurt for mayonnaise in the sauce for a healthier version.
