Ingredients
Scale
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 cup BBQ sauce
1 tsp Worcestershire sauce
1/2 tsp smoked paprika
Salt and pepper to taste
1.5 cups frozen corn
2 cups shredded cheddar cheese
1 bag (32 oz) frozen tater tots
Optional: green onions or parsley for garnish
Instructions
Preheat oven to 375°F (190°C).
In a skillet over medium heat, cook onion until soft. Add garlic and cook 1 minute more.
Add ground beef and cook until browned. Drain excess fat.
Stir in BBQ sauce, Worcestershire sauce, paprika, salt, and pepper. Simmer 3–5 minutes.
Mix in frozen corn and spread beef mixture into a 9×13-inch baking dish.
Top with shredded cheese, then arrange tater tots in a single layer on top.
Bake for 30–35 minutes, until tots are golden and cheese is bubbly.
Let cool slightly, garnish if desired, and serve warm.
Notes
Use rotisserie chicken instead of beef for a BBQ chicken twist.
Add a layer of black beans for extra protein and texture.
Swap cheddar with pepper jack for a spicy kick.
Great for meal prep—reheats well in oven or microwave.
