These BBQ Sausage Bites are the perfect party appetizer, featuring smoky sausage coated in a sticky, tangy BBQ glaze. Quick to make and full of flavor, they’re a hit at gatherings, game days, or casual dinners.

Ingredients

Scale
  • 1 lb (450 g) smoked sausage or kielbasa, sliced into 1-inch pieces
  • 1 cup (240 ml) barbecue sauce
  • 2 tablespoons honey or brown sugar (optional, for added sweetness)
  • 1 teaspoon Dijon mustard (optional, for extra tang)
  • 1 teaspoon smoked paprika (optional, for a smoky kick)

For garnish:

  • Chopped fresh parsley (optional)

Instructions

  1. Prepare the sausage:
    • Slice the smoked sausage or kielbasa into 1-inch pieces and set aside.
  2. Cook the sausage:
    • Heat a large skillet over medium heat. Add the sausage slices and cook for 4-5 minutes, turning occasionally, until browned on both sides. Drain any excess grease if necessary.
  3. Make the BBQ glaze:
    • In a small bowl, mix the barbecue sauce, honey (or brown sugar), Dijon mustard, and smoked paprika, if using. Stir until well combined.
  4. Combine sausage and glaze:
    • Reduce the skillet heat to low. Pour the BBQ sauce mixture over the sausage, stirring to coat all the pieces evenly. Let the sausage simmer in the sauce for 5-7 minutes, stirring occasionally, until the glaze thickens and the sausage is fully coated.
  5. Serve:
    • Transfer the BBQ sausage bites to a serving dish or skewer them with toothpicks for easy serving. Garnish with chopped parsley if desired.

Notes

  • Slow cooker option: Place browned sausage and BBQ sauce mixture in a slow cooker. Cook on low for 2-3 hours for a set-and-forget appetizer.
  • Variations: Add sliced bell peppers or onions for extra flavor and texture.
  • Spicy kick: Add a dash of hot sauce or a pinch of red pepper flakes for a spicier version.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop or in the microwave before serving.
