Bean Chicken is a hearty and wholesome dish combining tender chicken pieces with protein-rich beans in a savory, spiced tomato sauce. It’s easy to prepare and perfect for a comforting weeknight meal.

Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) white beans or black beans, drained and rinsed
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup chicken broth
  • 2 tbsp chopped fresh parsley or cilantro (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and cook for 3-4 minutes until softened. Add garlic and cook for another 30 seconds.
  3. Add chicken pieces and cook until lightly browned on all sides, about 5-6 minutes.
  4. Stir in diced tomatoes, beans, chicken broth, cumin, paprika, oregano, salt, and pepper.
  5. Bring to a simmer, reduce heat to low, and cover. Cook for 15-20 minutes until the chicken is cooked through and the flavors meld together.
  6. Uncover and simmer for another 5 minutes if needed to thicken the sauce.
  7. Garnish with chopped parsley or cilantro and serve hot.

Notes

  • Serve over rice, quinoa, or with crusty bread for a complete meal.
  • Use any variety of beans like kidney, black, or cannellini based on preference.
  • Add chopped bell peppers or spinach for extra vegetables.
