1 lb ground beef
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 tablespoon taco seasoning
1/2 teaspoon cumin
1/2 teaspoon chili powder
1 (15 oz) can refried beans
1/4 cup water
1 1/2 cups shredded cheddar cheese
6 large flour tortillas
Optional toppings: sour cream, salsa, guacamole
Instructions
Heat olive oil in a skillet over medium heat. Add diced onion and sauté for 2–3 minutes until softened.
Add ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat.
Stir in garlic, taco seasoning, cumin, and chili powder. Cook for 1 minute.
Add refried beans and water to the skillet. Stir to combine and heat through.
Warm tortillas in the microwave or on a skillet until pliable.
Spoon the beef and bean mixture onto the center of each tortilla. Top with shredded cheese.
Roll up each tortilla burrito-style, folding in the sides and rolling tightly.
Optional: place burritos seam-side down in a baking dish, sprinkle with extra cheese, and bake at 375°F (190°C) for 10 minutes until warmed through.
Serve with your favorite toppings.
