These easy Beef Enchiladas are filled with seasoned ground beef, melty cheese, and smothered in a savory red enchilada sauce. Baked until bubbly and golden, they make the perfect weeknight dinner or crowd-pleasing meal for any occasion. Serve with rice, beans, or a simple salad for a complete plate!

For the Filling:

  • 1 lb ground beef

  • 1/2 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tsp chili powder

  • 1 tsp cumin

  • 1/2 tsp smoked paprika

  • Salt and pepper, to taste

  • 1/2 cup canned diced green chiles (optional)

  • 1/2 cup red enchilada sauce

  • 1 cup shredded cheddar or Mexican blend cheese

For Assembly:

  • 8 flour or corn tortillas (68 inch size)

  • 1 1/2 cups red enchilada sauce (store-bought or homemade)

  • 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)

  • Chopped fresh cilantro, for garnish

  • Sour cream, for serving (optional)

Instructions

  1. Preheat Oven:
    Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.

  2. Cook the Filling:
    In a large skillet over medium heat, cook the ground beef and onion until beef is browned and onions are soft, about 5–7 minutes. Drain any excess grease.

  3. Season:
    Stir in garlic, chili powder, cumin, paprika, salt, pepper, and green chiles (if using). Cook for 1–2 more minutes.

  4. Add Sauce & Cheese:
    Stir in 1/2 cup enchilada sauce and 1 cup shredded cheese. Mix well, then remove from heat.

  5. Assemble Enchiladas:
    Warm the tortillas slightly so they’re easier to roll. Spoon about 1/3 cup of the beef mixture into each tortilla. Roll up and place seam-side down in the prepared baking dish.

  6. Top & Bake:
    Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.

  7. Bake:
    Cover with foil and bake for 15 minutes. Uncover and bake another 10–15 minutes, or until cheese is melted and bubbly.

  8. Serve:
    Garnish with fresh cilantro and serve with sour cream, lime wedges, or your favorite toppings.

Notes

  • Want a little heat? Use spicy enchilada sauce or add jalapeños to the beef.

  • Ground turkey or shredded chicken can be used instead of beef.

  • Leftovers reheat well and make a great next-day lunch.
