Beef Lombardi Casserole is a hearty and comforting layered casserole made with seasoned ground beef, tomato sauce, creamy cheeses, and noodles, perfect for feeding a crowd or meal prepping.

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 8 oz egg noodles
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1 1/2 cups shredded cheddar cheese
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Cook egg noodles according to package instructions; drain and set aside.
  3. In a large skillet, cook ground beef, onion, and garlic over medium heat until beef is browned and crumbly; drain excess fat.
  4. Stir in diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper; simmer for 5 minutes.
  5. In a separate bowl, combine sour cream and cottage cheese.
  6. Layer half of the cooked noodles in the prepared baking dish.
  7. Spread half of the sour cream mixture over the noodles, then top with half of the meat sauce.
  8. Repeat layers with remaining noodles, sour cream mixture, and meat sauce.
  9. Sprinkle shredded cheddar cheese evenly over the top.
  10. Bake uncovered for 25-30 minutes, until bubbly and cheese is melted.
  11. Garnish with chopped parsley before serving, if desired.

  • Substitute ground turkey or chicken for a lighter version.
  • Make ahead and refrigerate overnight before baking for easy meal prep.
  • Use ricotta cheese instead of cottage cheese for a creamier texture.
